Pickled herring salad. Pickled herring is a typical Dutch treat, and this dish uses it to combine into a fresh and quite tart salad.

Ingredients Edit

• ½ a small cucumber, grated
• 100 g celery, chopped
• 1 large gherkin, chopped
• 100 g pickled herring, sliced
• 2 tbsp sour cream
• 1 tsp mustard
• 30 g garden cress
• 1 small, sour apple
• ½ tbsp lemon juice

Directions Edit

1. Mix the cucumber, celery, gherkin and herring.
2. Mix the sour cream with the mustard.
3. Chop the cress and mix with the sour cream.
4. Spoon the sour cream over the salad.
5. Peel and dice the apple.
6. Add the apple to the lemon juice and mix with the salad.
