Soon There will be more zucchini than you can use before spoiling, so I like to share this great recipe. You can substitute egg plant or yellow squash for the zucchini, they all taste great.

  1. Preheat oven to 350°F
  2. Peel and cube medium-sized zucchini and onion and place in saucepan.
  3. Cover with water and bring to boil.
  4. Cook till tender.
  5. Melt butter in casserole dish.
  6. Make sure butter has covered dish.
  7. Cube toast and stir into butter, remove buttered toast cubes.
  8. Mix all other ingredients in a bowl, mix well and pour in ½ the toast cubes, mix gently and pour into casserole dish.
  9. Place the rest of the toast cubes over the top.
  10. Place in oven and cook till bubbly, approximately 25 – 30 minutes.
  11. May place slices of cheese on top and let bake another 5 minutes to melt.
  12. Also may add a little cayenne pepper, or other herbs to taste.
