Zucchini Frittata with Shallots, Onions and Garlic

  1. In a large skillet, saute together first 5 ingredients until zucchini are soft, but not browned.
  2. In a large bowl, stir together zucchini mixture and the remaining ingredients until blended.
  3. Place mixture in a heavily oiled (2 t) 9 x 13 inch pan and spread to even.
  4. Bake in a 350 oven for about 45 minutes or until frittata is set and top is golden.
  5. Cut into squares to serve.

Serves 6 to 8.
