Yellow Squash-Uncle's Casserole
Serves 7-8
- Wash and cook 1 c. rice
- 3 med zucchini, sliced
- Slice 1 - 2 tomatoes
- Chop 7 � oz. mild green chiles (canned)
- Grate � lb. Jack cheese (Set aside � of the cheese
for topping)
Mix together and set aside:
- 2 c. sour cream
- 1 t. oregano
- � t. garlic powder
- � t. salt
- � c. green onion, chopped
- � c. green pepper, chopped
Layer rice, chiles, cheese, zucchini, tomatoes, sour cream
mixture and cheese. Bake at 350 degrees for 45 minutes.
