This easy, rich salad is made with cooked, real yams, grated onions, mayonnaise, and lettuce leaves and is great as the new accompaniment for any meal.
- 2 lbs. cooked yams, diced
- 3 tsp. salt
- 1 cup grated onion
- 4 tsp. white pepper
- 5 tbsp. mayonnaise
- 8 crisp lettuce leaves
- Place yams, the grated onion, white pepper, salt, and mayonnaise in a mixing bowl and mix carefully so yam cubes do not break.
- Arrange on a platter with lettuce leaves. Serve cold and plain or with other vegetables, side dishes, or main dishes.
