World Recipe Banana Fritters

Ingredients

• ½ cup plain flour
• ½ cup self-rising flour
• 1 tablespoon castor sugar
• 2 eggs -- lightly beaten
• ½ cup milk
• 1 teaspoon oil
• 1 teaspoon vanilla extract
• 4 large banana -- halved
• oil -- for deep-frying
• sugar

Directions

1. Sift flours and castor sugar into bowl, gradually whisk in eggs, milk, oil and essence.
2. Dip banana pieces into batter, deep-fry in hot oil until lightly browned; drain on absorbent paper, toss in sugar.
