- 2 boneless, skinless Chicken breasts, cooked and cut into 1-inch cubes
- 1 8 1/2-ounce jar sun-dried tomatoes, drained and chopped
- 1/3 cup chopped Kalamata * 1/2 cup prepared vinaigrette
- 1/4 cup chopped thyme leaves
- 1 teaspoon oregano
- 1 teaspoon prepared horseradish
- 1/4 teaspoon ground black pepper
- 1 pound peeled and deveined Shrimp
- 3 cups hot cooked rice
- grated Parmesan cheese (optional)
- 1/2 teaspoon salt
- 1/8 teaspoon ground white pepper
- 1/4 teaspoon ground nutmeg
- 1 cup shredded Swiss cheese, divided
- 1/4 cup dry white wine
- 1/4 teaspoon ground white pepper

In large bowl, combine rice, Chicken, tomatoes, , vinaigrette and thyme. Toss well.
