Wicked Good White Bean Dip
- 8 cloves garlic, Peeled And Halved
- 2 T. Extra Virgin olive oil
- 2 Cans (15 Oz. Each) White beans, Drained And Rinsed
- 2 T. red wine vinegar
- 1/2 T. salt
- 1 T. Chopped parsley, Optional
Carefully Saut? The garlic in The olive oil in a Pan Over Medium Heat Without browning It, About 10 to 15 Minutes. Transfer The garlic oil to a Food Processor, Add The beans, vinegar And salt And Puree Until The Mixture is Smooth. Spoon The Mixture Into a Serving Bowl, Sprinkle With parsley And Serve With Crostini, Toasted Pita or Crudit?s. Makes 2 Cups.
