A very delicious meat dish which is best served with pasta bake.

  1. Slice the onions into rings and fry in oil in large pan.
  2. Crush garlic and add to pan with 2 pinches of salt.
  3. Add two tablespoons of tomato paste and stir until onion is golden.
  4. Add one tablespoon of coriander and one teaspoon of salt.
  5. Add juice from half of lemon and stir.
  6. Add fish to pan.
  7. Chop green peppers and put on top of as well as sliced tomatoes.
  8. If desired, add potatoes and/or carrots thinly sliced.
  9. Add sultanas and, if desired, apricots and cover pan.
  10. Chop coriander leaves and add to pan with pinch of salt.
  11. Cook even on stoke or bake in oven until fish is cooked (approximately 20 minutes).
