To be labeled virgin, an olive oil must be of the first pressing, cold pressed and suitable for human consumption without further processing. Degrees of “virgin” include extra, superfine, fine and simple depending upon the percentage of acidity. Extra-virgin olive oil can not have more than 1% acidity. The percentage increases to between 3 and 4% for simple.
