  1. Sauté garlic in olive oil 10 minutes. Don't brown.
  2. Cover; keep hot.
  3. Meanwhile, add salt to rapidly boiling water; gradually add vermicelli so water continues to boil.
  4. Cook uncovered, stirring occasionally until tender.
  5. Drain in strainer.
  6. Reserve ¼ cup cooking water.
  7. Stir reserved water into garlic/oil mixture.
  8. Pour over vermicelli.
  9. Toss.
  10. Serve with Parmesan cheese and pass the pepper mill.
