- 1 can sweet corn cream style
- 1 med Onion chopped
- 1 stalk celery diced
- 1 sm red pepper diced
- 1 cup long-grain white rice rinsed and drained
- 14 oz vegetable broth
- 1 qt Half-and-half
- 1 x vanilla bean, seeds of
- 2 x cinnamon sticks
- 10 x ears corn
- 2 tbl Sugar
- 1/4 cup milk
- 1 pch salt
- corn oil for sauteing
- 1/4 cup sour cream for garnish
[edit] Directions
- Remove kernels form husk of corn using a sharp knife.
- Puree in a blender.
- Heat griddle to medium heat, lightly coat with canola oil.
- Spoon mixture onto hot griddle to form "pancakes" of your desired size.
- Cook for 2 minutes on each side.
- Garnish with sour cream.
