1 In a small dish, combine sun-dried tomatoes, garlic and 2 tbsp. water. Cover with plastic wrap and microwave on medium-high for 20 seconds. Set aside for 10 minutes to allow tomatoes to plump up. Stir Mayonnaise and paprika into tomato mixture.

2 Heat a stovetop grill pan or heavy-bottomed sauté pan over medium-high heat. Cook veggie burgers according to package directions.

3 Place burgers in buns and garnish with a dollop of sun-dried tomato Mayonnaise.
