Spanish Black Bean Soup - Vegan

  1. In a blender, puree 2 cans of black beans and set aside.
  2. Under medium heat, sauté onion and garlic for about five minutes in a medium size pot.
  3. Add salt, pepper and splash of dry sherry.
  4. Add puréed black beans, 2 cans of whole beans, cumin, chili powder, bay leaves, cilantro and more salt and pepper if needed.
  5. Lower heat and let simmer for 10 minutes.
