Veal Loaf

Serves 6

This makes a lighter loaf than the beef version. Expensive milk-fed veal is not necessary for this dish.

2 lbs ground veal

� lb ground pork

� green pepper, chopped fine

1 onion, chopped fine

1 T lemon juice

1 t salt

1 C cracker crumbs

1 egg

� C milk

2 t Worcestershire sauce

Preheat the oven to 325�F. Combine all ingredients and mix until well blended, using a large spoon or your hands. Press into a loaf pan. Cover with foil and bake for 40 minutes. Uncover and bake 20 minutes more to brown the top.
