Brown the veal chops in half of the butter on both sides, keeping the meat pink in the center; it should take about 1 minute per side over high heat. Remove to a plate and season with salt and pepper. Melt the remaining butter in the same pan. Place 4 squares of parchment paper on a work surface and brush each with the remaining butter. Place 1 slice of prosciutto at the center of each square, top with a veal chop, the mushrooms, and another slice of prosciutto, and close the parchment paper, rolling the borders to make a rim and sealing them well.
