"I can never seem to bake cakes that have a flat top! What can I do to keep my cakes from blowing up in the middle? Sincerely, Tired of Them Humps"

This is a great question because flat cakes make icing and cake decorating much easier. This is also convenient for baking layered cakes that need flat layers to sit properly.

There are several ways to create flat cake layers. A simple quick fix is to take a serrated knife and to cut the dome off the top of the cake. Flip the cake over and ice the smooth side.

If you don't want to cut the dome off of the cake, we have another option you can try. The first is to wrap a clean wet (damp but not dripping) towel around the cake pan. You can use safety pins to fasten the towel.

The moisture from the towels helps the cake bake evenly. Make sure to smack the cake pan on the counter a few times to get out any air bubbles.
