  1. In a large skillet sauté the onion, garlic, and mushrooms in oil for about 5 minutes.
  2. Add the spinach, lemon juice, and pepper.
  3. Cook over low heat for 3 minutes.
  4. Add the turkey and eggs.
  5. Mix well.
  6. Pour into a greased 9-inch round baking pan.
  7. Bake at 350°F for 25 to 30 minutes or until the edges are set.
  8. Cut into wedges and serve.
