Turkey Bones Soup


  • 1 turkey carcass, broken up
  • 2 quarts water
  • 1/2 cup chopped onion
  • 1 stalk celery, sliced
  • 2 carrots, sliced
  • 1 bay leaf
  • 3 sprigs parsley
  • 1 1/2 t. salt
  • 1/4 t. pepper


1. Press bones in the bottom of a large kettle and add remaining ingredients. Bring to a boil and cover.
2. Simmer over low heat 2 to 2 1/2 hours.
3. Strain off broth and skim fat.

Serves 8
