  • 3 cups cooked rice, cooled
  • 2 15-1/4-ounce cans tropical fruit salad, drained
  • 1 6-1/4-ounce package miniature marshmallows (about 3-1/2 cups)
  • 1 cup sweetened flaked coconut
  • 1 8-ounce container lite non-dairy whipped topping
  • lettuce leaves

Directions Edit

  1. Combine rice, fruit, marshmallows and coconut in large bowl.
  2. Fold in non-dairy whipped topping.
  3. Chill for 30 minutes, serve on lettuce leaves.
