2 pkgs. (3 to 3 1/2 oz. each) thinly sliced pepperoni 1 1/2 lbs. blanched almonds, cashews and/or large peanuts 2 T. honey 2 T. Tex Mex Spice (recipe follows) or chili powder
Put pepperoni in a large flat baking pan. Bake in a 350 oven for 15 minutes, separating slices as they cook. Remove from oven. Add nuts to pan. stirring to mix with pepperoni. Bake 10 minutes. Drizzle with honey and return to oven for 5 minutes. sprinkle with Tex Mex Spice, stirring to distribute spice. Return to oven for 5 minutes. Drain on paper towels. Makes about 4 cups. Source: Marlboro Country Cookbook Tex Mex Spice: 1/4 cup ground dried chili pepper or chili powder 4 t. paprika 2 t. salt 2 t. ground ginger 1 t. black pepper 1 t. ground cumin 1 t. onion powder 1 t garlic powder 1/4 t. ground thyme 1/4 to 1 t. cayenne pepper Combine all ingredients and store in a jar with a tight lid. Sprinkle over grilled or broiled meats. add to chili, barbecue sauces, soups, casseroles, etc. Makes about 1/2 cup
