- 6 to 8 Ripe tomatoes, Peeled, Seeded And Coarsely Chopped
- 2 Cups Shredded mozzarella Cheese (8 Oz)
- 1/4 Cup Minced Fresh basil
- 1/4 Cup Plus 1 T. olive oil
- 2 cloves garlic, Minced
- 1 T. Minced Fresh parsley
- 1 Pkg. spaghetti (16 Oz)
Combine First 7 Ingredients. Stir Well. Cover And Let Stand at Room Temperature 1 Hour. Cook spaghetti According to Package Directions; Drain Well. Immediately Transfer Hot spaghetti to a Large Serving Bowl. Pour Sauce Over Hot Cooked spaghetti, Tossing Gently to Combine. Makes 6 to 8 Servings.
