- 1 tin of organic tomatoes, or 3-4 chopped medium fresh tomatoes
- 1 cup of frozen corn, or 2-3 cobs of fresh corn, scraped
- 1 onion, diced
- 2 cloves of garlic
- 3 cups of water, or vegetable stock if you have some
- Handful of fresh basil, or frozen basil or 3 Tblsp pesto
Saute the onions and garlic, add tomatoes, water/stock and corn. Simmer about 10 minutes. Add basil just before serving, and salt and pepper to taste. It's especially good with a squeeze of fresh lemon in the bowl.
