- Bottom Layer:
- 1/2 cup margarine
- 1 cup flour
- 1/2 cup brown sugar
- Top Layer:
- 1/2 cup medium-firm tofu, whipped smooth
- 1 cup brown sugar
- 1 tsp vanilla
- 2 tbsp flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup shredded coconut
- 1 cup chopped almonds
- Heat your oven to 350 F. Mix margarine and Sugar and add flour. Press and flatten into the bottom of a 9” square baking pan. Bake 10 minutes, then top with:
- Place whipped tofu in a large bowl and stir in the Sugar and vanilla. Stir in the flour, baking powder and salt. Add the coconut and almonds. Return to the oven and bake 25 minutes or until the topping is golden. Cool slightly and cut into bars or squares.
