Bourbon Street pecan Praline Pie

in Heavy 1-Qt Saucepan, Combine sugar, butter, 1 Tbsp water & salt. Cook Over Med Heat Until sugar is Dissolved. Stir sm Amount of Hot Mixture Into egg Yolk; Return to Hot Mixture. Continue Cooking, Stirring Constantly Until Thickened. Remove From Heat. Stir in pecans. Spread Mixture Onto 9? Cookie Sheet. Cool. Break Into Bite-Sized Pieces. Combine cream cheese & marshmallow Cr?me, Mixing at Med Speed on Electric Mixer Until Well Blended. Blend in Bourbon & Remaining 2 Tbsp water. Reserve 1/2 c Praline Pieces; Folding Remaining Pieces & Whipped Topping Into cream cheese Mixture. Spoon Into Crust. Top With Reserved Praline Pieces. Freeze Until Firm.

Crust: Mix vanilla Wafer Crumbs With Flaked coconut. Stir in Melted butter. Press on Bottom & Side of 8?-9? Springform Pan. Chill Until Ready to Use. Filling: Mix gelatin & 1/2 c sugar in Saucepan. Add pineapple juice. Let Stand 1 min. Heat on Low Until gelatin Dissolves, 5 min. Remover From Heat. Add egg Yolks, 1 at a Time, Beat Well After Each Addition. Cool Slightly. Beat cream cheese Until Fluffy. Blend in gelatin Mixture With rum & coconut Extract. Chill Quickly be Setting Mixture Over Bowl of ice water; Stir Until Slightly Thickened. Beat egg Whites Until Foamy. Gradually Add 1/4 c sugar, Beating Until Stiff Peaks Form. Fold in gelatin Mixture. Turn Into Prepared Crust. Refrigerate Overnight. in Saucepan, Combine Undrained pineapple With 2 Tbsp sugar & cornstarch. Cook, Stirring Until Mixture Boils & Thickens. Cool. Spoon Over Cheesecake.

Heat Oven to 350?f. Melt chocolate With water & coffee Powder in Top of Double boiler Over Hot water. Stir Until Smooth. Remove From Heat. Cool Slightly. Beat egg Yolks With sugar in lg Bowl Until Fluffy. Stir in Cooled chocolate; Mix Thoroughly. Beat egg Whites Until Stiff But Not Dry; Gently Fold Into chocolate Mixture. Grease Jellyroll Pan With vegetable oil; Cover With Sheet of Waxed Paper Extending 1? Beyond Ends of Pan. Spread Batter Evenly Over Paper. Bake 17-18 min; Cake Will Puff up & Surface Will Have Dull Finish When Done. do Not Over Bake. Soak Layer of Paper Toweling in water & Wring Dry; Place Over Top of Cake. Cover With Layer of Dry Paper Toweling. Let Stand 20 min. Remove Paper Toweling. Loosen Edges of Cake. Sprinkle Top of Cake With cocoa. Soak Dishtowel in water & Wring Dry; Stretch Taut Over Cake & Invert. Lift Off Pan & Carefully Peel Off Waxed Paper. Roll up Towel With Cake Inside It, Along Long Edge. Let Stand 5 min. Unroll Cake & Spread Softened

vanilla Ice cream Evenly Over Surface. Re-Roll Cake Without Towel; Place Seam-Side-Down on Long Flat Platter or Jellyroll Board. Don?t Worry if Cake Cracks a Bit. Using Spatula or Pastry Tube With Star Tip, Cover Roll With whipped cream. Place in Freezer Until Solid, at Least 4-5 Hr. Remove From Freezer 15 min Before Serving. This ma be Made in Advance & Stored in Freezer in Airtight Plastic Bag up to 2 Wk.

Lightly oil Bottom & Sides of 9? Springform Pan. Using Bowl Scraper, Spread 1/2 coffee Ice cream & Carefully Spoon Remaining Ice cream Over Top. Place in Freezer 3 hr or Until Ice cream is Firm. Whip Cream With Confectioner?s sugar & Liqueur. Remove Cake From Freezer & Remove Sides of Springform Pan. Using Bowl Scraper or Pastry Tube, With Star Tip, Layer whipped cream Entirely Over Cake Surface. Return to Freezer 1-2 hr Longer. Remove From Freezer 15 min Before Serving. Ice cream Cake May be Stored in Airtight Plastic 2 Wk.

Place Chicken in Baking Dish lg Enough to Hold Pieces Without Quite Touching. Pour Cream sherry Into Bottom of Dish to Depth of 1/4?. Spoon Undiluted Cream of Mushroom Soup Over Top, Spreading as Evenly as Possible. Bake at 350?f 45-60 min or Until Chicken is Tender. Serve Over Long grain & wild rice.

Sprinkle 3 Tsp Seasoning Blend Over Pork Chops; Set Aside. Heat 2 Tbsp olive oil in lg Nonstick Skillet on Med Heat. Add Pork Chops; Cook 8 min or Until Desired Doneness; Turning Once. Toss Salad Greens, tomato & Onion in lg Bowl. Mix Remaining 3 Tbsp Olive, vinegar & Remaining Seasoning Blend. Pour Over Salad; Toss to Coat Well. Divide Salad Among 4 Servings Plates. Top Each With 1 Pork Chop. Serve Immediately.

Rinse & Dry peppers. Protecting Hands With Rubber Gloves, Stem peppers & Chop, Veins, Seeds & All Into Med-Coarse Pieces. Place peppers in Clean, Dry Heat-Proof qt Jar With Snug Lid. Heat vinegar to Simmering in Saucepan; Pour Over peppers. Cool peppers & vinegar, Uncovered; Then Cap Jar With Enamel-Lined Canning Lid or Use a Recycled Lid Over 2 Layers of Plastic Wrap. Let Mixture Stand at Least 2 wk or as Long as 3 Mon, Shaking Jar Occasionally. When You Think it Might be Ready, Taste Liquid Cautiously! It?s a Good Idea to Sample it on a Bit of Bland Food, Rather Than Directly. if It?s Fiery Enough to Suit; Strain Through Very Fine Meshed Sieve, Pressing Lightly on Debris of peppers to Extract All Possible Flavor. Bottle Sauce in Clean, Dry Bottles or Jars & Cap Airtight. Optionally, Place a Single Whole Dried hot pepper in Each Bottle or Tie 1-2 hot peppers to Neck of Each Bottle to Indicate Heat Quotient of Contents.
