- Serves 6 People
- 1½ lbs ground chicken breast
- 2 eggs, beaten
- 2 small onions, finely chopped
- 2 cups fresh breadcrumbs
- 2 tbsp grated Parmesan or romano cheese
- 2 tbsp fresh parsley, finely chopped
- salt and pepper, to taste
- Preheat oven or toaster oven to 350°F.
- Combine all ingredients in a bowl, mixing well.
- Spoon equally into a 6-cup muffin pan.
- Bake for 25 – 30 minutes, or until thoroughly cooked.
