Swiss Cheese Sauce
3 T. margarine 3 T. flour 1/2 t. salt 1/8 t. pepper 2 cups milk 3/4 cup shredded Swiss cheese (3 oz)
Melt margarine over low heat in pan. Stir in flour, salt and pepper. Cook, stirring constantly until mixture bubbles. Stir in milk. Cook, stirring constantly until sauce thickens and bubbles, 3 minutes. Stir in cheese until melted. Keep warm. Use over broccoli, asparagus, cauliflower or omelets. Makes 2 1/2 cups.
