Sweet as Sugar Snap Peas

1 lb. sugar snap peas 1/2 cup red onion, thinly sliced 2 cloves garlic, minced 2 T. olive oil 1/2 t. salt 1/4 t. pepper

Cover peas with water in a large pan and boil for 3 minutes; drain and rinse with cold water. Combine all ingredients; toss to coat. Cover and chill for one hour to overnight. Serves 4 Source: Get Togethers
