Sweet and Tangy Barbecue Sauce
1 large onion, finely chopped 1 t. vegetable oil 3/4 cup cola soft drink 3/4 cup chili sauce 1 T. brown sugar 1/2 t. salt 1 T. dry mustard 1 T. paprika 1/8 t. ground red pepper 2 T. white vinegar
Cook onion in oil in a large pan over low heat, stirring often, 15 minutes or until onion is caramel colored. Stir in cola and remaining ingredients. Bring to a boil over medium heat. Cover, reduce heat and simmer, stirring occasionally, 45 minutes. Serve with beef or pork. Makes 2 cups. Vinegar, chili sauce and red pepper heat things up in this sweet cola based barbecue sauce.
