- 3 medium sized yams, scrubbed clean and cut into french fries
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1 tbsp sea salt
- 2 tsp cinnamon
- 1 tsp cayenne pepper (or less, to taste)
- Preheat oven to 425 F.
- In a large bowl, whisk together all the ingredients except the yams. Add the yams to the oil mixture and toss thoroughly. Spread the yams out onto to baking sheets so that they lay in an even single layer. Roast these in the oven for about 30 minutes, or until browned and crispy, turning frequently.
- Serves 4-6 hungry people.
