Swedish Rice Pudding

  1. Butter a casserole or pan ,set aside.
  2. Combine the rice and 1 cup of the milk.
  3. Cover and cook over simmering water until 45 minutes.
  4. Pour into prepared pan.
  5. Preheat oven to 375-degrees.
  6. Lightly beat the eggs.
  7. Add the Sugar, vanilla, butter, salt and remaining milk and mix well.
  8. Pour over the rice and sprinkle cinnamon liberally over the top.
  9. Place dish in a pan of hot water.
  10. Bake for 50-60 minutes.
  11. Remove from the hot water and cool on a rack.
  12. Serve at room temperature or chilled.
