Cook time: 45 minutes
A tasty cake that my mother used to bake in the 1940s and 50s.
- ½ cup butter
- 2 eggs
- 2 cups all-purpose flour
- pinch (½ tsp) salt
- 1 cup light brown sugar lightly packed
- 1 cup sour milk (stir 1 tbsp or more lemon juice or white vinegar into warm sweet whole milk and let stand for 10 minutes to clabber or use buttermilk)
- 1 teaspoon baking soda
- 1 cup coarsely chopped walnuts
- 1 cup coarsely chopped raisins
- rind of 1 orange, grated
- 9" square cake pan lightly greased and floured
- Cream butter.
- Cream in brown sugar until light and fluffy.
- Beat in eggs one at time and then salt.
- Beat in half of flour.
- Stir grated orange rind into sour milk.
- Holding cup over batter for foaming, stir baking soda into sour milk and beat sour milk into batter.
- Beat in remaining half of flour.
- Stir in chopped walnuts and raisins until well incorporated.
- Pour into prepared pan and bake at 350°F for 45 minutes or until done.
- Meanwhile, combine powdered sugar and orange juice for glaze.
- When cake is done, remove from the oven and let stand for 10 minutes.
- Turn out onto wax paper on plate and then turn over onto plate with topside up.
- Spoon glaze over hot cake and let cool.
