- 2 slices of multigrain vegan bread, toasted
- shredded carrots
- bean sprouts
- salt and pepper
- olive oil
- Toast the vegan bread, spread hummus on each side (I also like hummus on one side and dijon on the other) slice your veggies and spread em out—these are the veggies I like, but I'm sure Mushrooms, tomatoes and peppers would be good, too. Shake a little salt and pepper over the whole thing and a touch of oil
