This is a simple recipe for a vegetarian pot roast. Makes a great entree or even main dish with Beef, Chicken or Pork.

  1. Slice the onions into 1/2 inch thick rings
  2. You can cut the Mushrooms in half or keep them whole
  3. Dice the rest of the vegetables into 1 inch cubes
  4. Mix all the vegetables in a plastic bowl. Add seasonings to them.
  5. Transfer to a pot.
  6. Heat oven to 350 F. and put the vegetables, covered, in for 30–45 minutes.
  7. Uncover the vegetables and put back in the oven for 10-15 more minutes.
