Makes 4 servings

   2 cups water                                                    
   1 16-ounce bag baby carrots                                     
   2 tablespoons orange juice                                      
   1/4 cup orange marmalade                                        
   1/8 teaspoon ground nutmeg                                      

Pour water into pressure cooker. Set carrots atop rack or trivet in cooker. Lock lid and bring to full pressure. Lower heat and maintain pressure. Cook for 2 minutes. Quick-release pressure.

In a microwave-safe bowl, combine juice and marmalade. Stir in nutmeg. Microwave on medium until hot, 1-3 minutes. Transfer carrots to a serving bowl. Drizzle orange sauce over carrots and toss to coat.
