About Sturgeon Edit
Sturgeon are members of an ancient group of large fish. Sturgeons are found only in the northern hemisphere. Sturgeon is without bones and the processed roe, known as caviar, is highly valued. They are usually found in Caspian Sea.
The coloring of this fish varies from olive-brown to grey on back and sides, with a white belly and it has a large, bony-plated body. The females require more than twenty years to grow to maturity, and then they spawn only every four to six years during during their fifty year lifespan. Sturgeon are also very slow growing, often taking more that 25 years to reach reproductive maturity.
Types of sturgeon fish include:
- white and green sturgeon
- white shovelnose
They eat fresh, smaller fish but they also can grow by feeding themselves with marine plants and insects. They are slow swimmers so they are easy to catch for their eggs and oil which are both very expensive. This fish can grow from three to five feet and with a weight of ten to eighty pounds. Sturgeon in the Frazer river can be hundreds of pounds and over 12 feet long. They all have to be released.
