Stuffed Tomatoes with Paneer and Vegetables

  1. For tomatoes:
  2. Scoop the tomatoes. Keep aside the pulp for the gravy.
  3. Add the ghee and fry the Onion for 1 minute.
  4. Add the green chillies and fry again for ½ minute.
  5. Add the cashewnuts and fry again for ½ minute.
  6. Add the vegetables, paneer and salt and cook for a few minutes.
  7. Fill the tomatoes with the mixture.
  8. For gravy:
  9. Heat the ghee and fry the Onion till golden in colour.
  10. Add the tomato pulp, tomato ketchup, chilli powder and salt and boil for 1 minute.
  11. For baking grease a flat baking tray and arrange the tomatoes over it.
  12. Pour the gravy all over and bake in a hot oven at 400oF for 15 to 20 minutes.
  13. Serve hot. If you like, decorate with Potato wafers.
