  1. Wash and drain strawberries. Remove caps and cut in half.
  2. Spoon halved strawberries into 8 chilled sherbet dishes.
  3. Soften ice cream in the microwave for 30 seconds and fold in yogurt.
  4. Drizzle ice cream mixture over strawberries. Garnish with whole strawberries and mint sprigs.
  5. Serve immediately.
