  1. Cook onion in butter until tender.
  2. Add spinach; cook about 1 minute. Remove from heat.
  3. Blend in buttermilk, cottage cheese, rice, salt, pepper and eggs.
  4. Turn into buttered shallow 2-quart casserole.
  5. Bake at 350 °F for 25 minutes.
  6. Arrange tomato slices on top; sprinkle with cheese.
  7. Return to oven and bake 10 minutes longer.
