  1. Coat a small sauté pan with cooking spray and heat over medium- high heat.
  2. Add bacon and sauté 3 minutes or until bacon is crispy.
  3. Add remaining ingredients except spinach and bring to a boil.
  4. Boil for 5 – 7 minutes or until slightly thickened.
  5. Place spinach in a large bowl.
  6. Drizzle hot dressing over spinach and toss to coat.
