Spicy vegetable cakes

Spicy Prune Cake:

  • 1 cup boiling water
  • 1 cup cut up pitted uncooked prunes
  • 2 cups all purpose flour
  • 1 1/2 cups sugar
  • 1 1/4 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cloves
  • 1/2 cup vegetable oil
  • 3 eggs
  • 1 teaspoon vanilla
  • 1 cup chopped nuts

Pour boiling water on prunes in large mixing bowl; let stand for 1 hour. Heat oven to 350F. Grease and flour oblong pan 13x9x2 inches. Beat prunes and remaining ingredients on low speed, scraping bowl constantly, 1 minute. Beat on medium speed, scraping bowl occasionally, 2 minutes. Pour into pan.

Spicy Zucchini Cake: Decrease boiling water to 1/3 cup and substitite 3 cups finely chopped zucchini (about 4 medium ones) for the prunes. Do not let the zucchini stand. Decrease sugar to 1 1/4 cups.
