- 2 slices of your favorite sandwich vegan bread
- 3 slices soy "Turkey"
- 4 thick slices of cucumber
- vegan Cheese (your favorite, mine is Cheddar)
- Smear the hummus onto the two slices of toasted bread. Add the cucumbers (I find that they stick better on the side with the hummus), "Turkey", lettuce, tomato then Cheese. The Cheese should be on the other slice of vegan bread to help keep all of the ingredients IN the sandwich. Microwave for 20 or so seconds and viola! It's quick and there's a lot of protein, not a lot of calories and very filling!
