Southwestern Ham and Rice Salad
Lime juice and cumin make this low-fat recipe from Cooking Light special. It's a great way to use leftover ham.
1/4 cup light mayonnaise 1 tablespoon fresh lime juice 1/2 teaspoon chili powder 1/2 teaspoon dried oregano 1/4 teaspoon ground cumin 1/8 teaspoon salt 3 cups cooked long-grain brown rice 1 1/4 cups diced lean ham 1/2 cup diced celery 1/4 cup diced red onion 3 tablespoons chopped ripe olives
Combine mayo, lime juice, chili powder, oregano, cumin, and salt in a small bowl; stir well. Combine rice and remaining ingredients in a large bowl; stir in mayo mixture. Chill for several hours or overnight.
