Sophia Loren's Pasta Alla Putanesca
- 1/2 Cup oil
- 1 Small Onion, Chopped
- 3 garlic cloves
- 1 Can plum tomatoes, Drained And Quartered (14 Oz)
- 3 Anchovies, Minced
- 1 T. Drained capers
- 1/2 Cup Pitted Italian ripe olives
- 1/2 T. Crushed red pepper flakes
- 1/8 T. salt
- 1/8 T. oregano
- 1 Lb. Pasta (use Favorite Kind)
- 3 T. Grated Parmesan cheese
In Large Skillet, Heat oil; Add Onion And garlic. Saut? Until Golden. Remove garlic; Add tomatoes, Anchovies And capers. Cook Covered Over Medium Heat 15 Minutes. Add , pepper flakes, salt And oregano. Cook 5 Minutes. Cook Pasta According to Package Directions For al Dente. Drain And Transfer to Large Serving Bowl. Toss Pasta With Sauce. Add Cheese And Toss Again. Serve at Once.
