Skillet Lima Beans

2 T melted butter

� large onion, diced

� pimento, diced

2 T diced green pepper

3 C cooked lima beans; drained

1 C sour cream

Salt & pepper to taste

Melt butter in large skillet; add onion, pimento and green pepper. Saute until soft. Add beans; simmer for about 4 minutes or until heated through. Mix in sour cream, salt and pepper; simmer for 2 minutes longer. Serve.

Yield: 8 servings
