Skillet Chicken and Rice

1/4 cup flour Salt 1 t. paprika 1/4 t. pepper 1 broiler fryer, cut up, about 3 lbs. 1/4 cup margarine or other fat Water 1 medium onion, sliced 3/4 cup uncooked rice (or uncooked brown rice, if desired)

Mix flour, 1 t. salt, the paprika and pepper. Dredge chicken pieces with mixture and saut� in margarine in skillet until browned on both sides. Pour off most of fat. Add 2 cups water, 1/2 salt, onion and rice. Stir with fork. Bring to boil, simmer, covered, 30 minutes or until rice and chicken are tender and liquid is absorbed. Serves 4 Source: My Old Recipes
