  1. Chop spring onion stems, and discard onion bulbs; wash and chop parsley and mint.
  2. Dilute mayonnaise with milk and mix well.
  3. In a large saucepan, heat water.
  4. Boil potatoes.
  5. Remove from flame and let it cool.
  6. Peel the skin and slice.
  7. Transfer into a serving bowl while still warm.
  8. Add salt, pepper and chopped spring onions.
  9. Mix well.
  10. Add thinned mayonnaise and mix ensuring that each slice is coated with mayonnaise.
  11. Be careful not to break the potato slices.
  12. Add half the mint and parsley and toss gently.
  13. Garnish with the remaining half.
