Shrimp with Green Peppers
Adapted from a Mandarin classic, this is a skillet stir-fry.
2 T vegetable or peanut oil
Salt to taste
2 green peppers, in 1-� inch squares
1 medium onion, halved and cut in �-inch slices
1 lb raw shrimp, cleaned and deveined
1 recipe All-Purpose Sweet-and-Sour Sauce
8 sprigs cilantro
Place a saut� pan or skillet over high heat. When hot, add the oil and let it get hot. Lightly salt the peppers and onion, then add to the skillet and cook, stirring and tossing constantly, for 2 minutes. Add the shrimp and continue to cook, stirring and tossing, for about 1-� minutes, until the shrimp are pink. Remove from the heat and stir in the sauce. Garnish with cilantro.
