  1. Dice finely: ginger, garlic, red pepper.
  2. Add fish sauce, palm sugar and little regular sugar.
  3. Clean and butterfly shrimp.
  4. Boil shrimp less than a one minute.
  5. Boil bitter melon for about 20 to 30 seconds.
  6. Adding more peppers makes it hotter.
  7. Arrange on a plate and pour sauce over the top.
