  1. Shell and clean shrimp leaving tails on.
  2. Lightly slash underside diagonally.
  3. Heat deep fat to 365°F.
  4. Sift the one cup flour with cornstarch and seasonings.
  5. Combine egg yolk, sherry and water; stir into flour mixture.
  6. Dip shrimp in flour, then batter, and fry until lightly browned.
  7. Drain and serve immediately.
